Lightest way to set up file shares running completely on ProxMox

I have a mini PC with 4 NVMe drives running ProxMox that I'm using as a travel server. The goal is to run things like OpenWRT, Jellyfin, and AudioBookShelf so I can provide secure networking as well as keeping a selection of media and games for the family.
